On-the-Go Meals Made Easy: Simple and Delicious Recipes for Life in a Hurry
I think its safe to say that at one point or another, we've all had a last minute dash around the kitchen just before leaving for work when we realise we've forgotten to make our lunch, but will often have to leave empty handed. We can hear the supermarkets calling our name as lunchtime approaches and we ponder over what meal deal takes our fancy that day, but ultimately waste most of our lunch break having to pop out to get it. Introducing meal prep into your life will not only help with lunches or dinners, but breakfasts too as we're all guilty of having skipped breakfast on occasions due to lack of time in the mornings! Now, the idea of meal prep can sound daunting to many but having your meals already prepared can make rushed mornings when you're trying to get yourself and your children out of door, that much less stressful.
With the use of handy storage containers, meal prep and food on the go can be breeze. Ingredients:
70g Greek Yoghurt
A sprinkle of chia seeds
A drizzle of honey
40g Berry Granola (can be switched to Gluten Free granola if needed)
20g Frozen Raspberries
20g Frozen Blueberries
5g Chocolate Chips
Method:
Step 1
Place 70g of greek yoghurt into the bottom of the Kilner Breakfast Jar Set, smoothing it out with your spoon to create the first layer of your yoghurt bowl.
Step 2
Sprinkle a pinch of chia seeds onto the greek yoghurt, followed by a drizzle of honey.
Step 3
Layer 40g of berry granola onto your yoghurt. This can be swapped for a gluten free granola if required.
Step 4
Finish your yoghurt bowl with 20g of frozen strawberries, 20g of frozen blueberries and 5g of chocolate chips. Using frozen fruit helps to keep them fresher for longer and reduces food waste.
The great thing about breakfasts such as these is that they can be so easily customised to your personal taste by changing up the fruit and flavour of yoghurt used. Inspiration for lunches is often where I've struggled in the past however, recently I've come to realise that the simplest of meals are often the best. A firm favourite of mine currently is a simple jacket potato. I can easily pop it in microwave cookware or oven to cook whilst I'm getting ready for work, layer with some butter and cheese in one of our handy storage containers and quickly heat it up in the microwave on my lunch break. The best part of meals such as these are that you can easily switch up the toppings so that you don't get bored, think tuna and cheese, cheese and beans, chilli or even a simple salad. Alternatively, leftovers from your evening meal are fantastic to take with you to work and leave you feeling like you've whipped up a meal from scratch without the additional effort. Leftovers such as pasta bake, spaghetti bolognese and chilli are perfect for when you need a heartier and comforting meal on cooler days, whilst leftover fajitas, potato salads or pesto pasta are ideal for warmer summers days.
